Recipes from around the world – Spain – Paella

One thing I love about travel is being able to try local cuisine wherever I go. Admittedly, I’m not the best cook, but I do love to eat out in all the countries that I visit. Having been home for around a month however, I have been missing being able to try out a variety of local dishes from around the globe, and it’s prompted me to reach out online to find the recipes of some to give a try at cooking while I’m at home. I know international cuisine and trying local food is something which many travellers love to do, so I thought I’d share the recipe for each dish I try here on in case you wanted to try making it too. I thought I’d start with something simple, and go with Spanish Paella.


  • 1 tbsp of olive oil
  • 1 leek or onion, sliced
  • 110g pack of chorizo sausage, chopped
  • 1 tsp of  turmeric
  • 300g of  long grain rice
  • 1l hot fish or chicken stock
  • 200g of frozen peas
  • 400g of  frozen seafood mix , defrosted


  1. Heat the oil in a deep frying pan, then soften the leek for 5 min without browning. Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 min, stirring occasionally.
  2. Tip in the peas and cook for 5 min, then stir in the seafood to heat through for a final 1-2 min cooking or until rice is cooked. Check for seasoning and serve immediately with lemon wedges.

Chorizo sausage

Chorizo sausage comes from Spain and has a smoked paprika flavour. You can use a handful of pork or chicken instead – cook for 5 mins with 1 tsp smoked paprika before adding the rice.

In total, including prep & cooking time, this took me around 30 -35 minutes from start to finish, and serves around 4 people.

  1. Enjoying local cuisine is one of the best things! Eventhough I am not the most adventurous eater I can always find something to eat. Thanks for the Paella recipe, my husband loves Paella so maybe I’ll have him make it!
